What a wonderful summer dish – spicy basil chicken – with basil and jalapeño from our garden. We served it over cauliflower rice with – why not – corn on the cob on the side.

Ingredients
- 2 boneless skinless chicken breasts, sliced into strips
- 2 tablespoons low sodium soy sauce
- 2 tablespoons low sodium fish sauce
- 2 teaspoons olive oil
- 4 garlic cloves, minced
- 1 jalapeño, finely chopped (seeded, if you want to minimize the heat)
- A good sized bunch of basil - equal to a couple cups
Instructions
- Slice your chicken into strips, marinate in a flat bottom bowl with the soy and fish sauces. Preheat oil over medium-high heat in a wok or large pan. Add minced garlic and chopped jalapeño, heat and stir until fragrant then add your chicken. Continue to cook until you reach 165° - it won't take very long, 4-5 minutes, don't overcook! Remove from heat then stir in the basil.
Notes
- We served over cauliflower rice, but it would also be tasty served over some jasmine rice cooked with a pinch of salt.
