Indian Spiced Chicken

Credit for this one goes to Gwyneth Paltrow’s “It’s All Easy.” Literally every recipe we’ve tried from this cookbook has been out of the park. The end result was a tasty and incredibly juicy bird. We will for sure be making this again… maybe tonight.

Ingredients
  1. 2 garlic cloves, finely grated or minced
  2. 2 teaspoons fresh ginger, peeled and finely grated or minced
  3. 1 tablespoon tomato paste
  4. 4 tablespoons whole milk yogurt
  5. 1 teaspoon garam masala
  6. 1 teaspoon tandoori spice
  7. 1½ teaspoons salt (or less if you are sodium sensitive)
  8. 2 tablespoons olive oil
  9. 1 whole chicken (3-4 pounds), spatchcocked or butterflied
Instructions
  1. Preheat the oven to 425° or preheat grill.
  2. In a medium bowl, combine the garlic, ginger, tomato paste, yogurt, garam masala, tandoori spice, salt and olive oil. Rub the marinade all over the chicken, making sure to get as much as possible underneath the skin.
  3. Place the chicken in a roasting pan and roast until you reach 165° - I started checking it every 10 minutes or so after 50 minutes because our convection oven tends to roast things quickly. Watch carefully and if the chicken is browning too much, cover with foil. Our chicken was done after about 70 minutes.
  4. Let rest for 10 minutes (it will be torture because it smells and looks so good), carve and enjoy.
Notes
  1. We are totally planning on grilling this next time around - we usually grill the chickens over direct heat until the skin is nice and crispy then move to indirect and roast until cooked through.
