Ingredients
- 1 cup jasmine rice
- 2/3 cup coconut milk
- 1 1/3 cup water
- 1 cup mango salsa (I used Trader Joe's frozen mango salsa )
- Salt, to taste
Instructions
- Combine rice, coconut milk and water in a sauce pan and bring to boil on high heat. Cover, reduce heat to low and simmer until liquid is gone, about 12-15 minutes. Toss with mango salsa over low head until salsa is heated through, salt to taste and cover until ready to serve.
Notes
- Served with barbecued jerk-spiced chicken and corn on the cob for a delicious summer meal
