I LOVE this salad dressing. Simple but delicious! Makes a big batch so you can have lunch for the week.

For the dressing
  1. 1/4 cup salsa
  2. 1/2 cup greek yogurt
  3. Salt and pepper to taste
For the salad
  1. 5-6 cups lettuce - we use spring mix with spinach and arugula
  2. 1 bell pepper
  3. 1 pound ground turkey
  4. Taco seasoning
  5. 1/4 cup salsa
  6. Salt, to taste
Optional extras
  1. Avocado
  2. Pepper jack cheese
  3. Cilantro
  4. Crunched up tortilla chips
Instructions
  1. This is a simple one. Prepare your taco meat using your preferred methods. I saute the ground turkey in a skillet sprayed with cooking spray (or use 2 teaspoons of olive oil). I think sprinkle with a tablespoon or so of taco seasoning (we use Trader Joes Taco Seasoning Mix and never use the whole pack - I just store in a bag and save for next time) and mix with about a quarter cup of salsa.
  2. While your meat is cooking, prep your veggies. Cut your lettuce, bell pepper, and any extras like avocado or cilantro. Grate you cheese, if using.
  3. Prep your salad dressing. Combine the yogurt and salsa. Salt and pepper to taste. Can thin with a little water if needed. Add more salsa if you'd like.
  4. Top your lettuce with the meat, pepper, any extras you are using and a dollop of the dressing.
Notes
  1. This should make enough for lunch for a week. I keep all the ingredients separate and bring to work using my awesome Stay Fit Deluxe Salad Kit. If I'm using avocado, I don't cut it until the day I'm using it and wrap it tightly in plastic wrap.
  2. You can adjust the amounts based on desired serving size - just use a 2:1 ratio with your yogurt / salsa dressing, i.e. 2 tablespoons of yogurt to 1 tablespoon of salsa.
