I LOVE this salad dressing. Simple but delicious! Makes a big batch so you can have lunch for the week.

For the dressing
- 1/4 cup salsa
- 1/2 cup greek yogurt
- Salt and pepper to taste
For the salad
- 5-6 cups lettuce - we use spring mix with spinach and arugula
- 1 bell pepper
- 1 pound ground turkey
- Taco seasoning
- 1/4 cup salsa
- Salt, to taste
Optional extras
- Avocado
- Pepper jack cheese
- Cilantro
- Crunched up tortilla chips
Instructions
- This is a simple one. Prepare your taco meat using your preferred methods. I saute the ground turkey in a skillet sprayed with cooking spray (or use 2 teaspoons of olive oil). I think sprinkle with a tablespoon or so of taco seasoning (we use Trader Joes Taco Seasoning Mix and never use the whole pack - I just store in a bag and save for next time) and mix with about a quarter cup of salsa.
- While your meat is cooking, prep your veggies. Cut your lettuce, bell pepper, and any extras like avocado or cilantro. Grate you cheese, if using.
- Prep your salad dressing. Combine the yogurt and salsa. Salt and pepper to taste. Can thin with a little water if needed. Add more salsa if you'd like.
- Top your lettuce with the meat, pepper, any extras you are using and a dollop of the dressing.
Notes
- This should make enough for lunch for a week. I keep all the ingredients separate and bring to work using my awesome Stay Fit Deluxe Salad Kit. If I'm using avocado, I don't cut it until the day I'm using it and wrap it tightly in plastic wrap.
- You can adjust the amounts based on desired serving size - just use a 2:1 ratio with your yogurt / salsa dressing, i.e. 2 tablespoons of yogurt to 1 tablespoon of salsa.
